Peep-tastic Matcha Pancakes: Get the little ones (and the young at heart) excited with some Easter-themed pancakes! Shape your pancakes into cute bunnies or chicks using cookie cutters, then decorate with fresh fruit and whipped cream. It's almost too adorable to eat... almost!

Ingredients:

Instructions:

  1. In a mixing bowl, whisk together the flour, matcha powder, sugar, baking powder, and salt until well combined.

  2. In a separate bowl, beat the egg lightly, then stir in the milk and melted butter.

  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; it's okay if there are a few lumps.

  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.

  5. Using a ladle or measuring cup, pour the pancake batter onto the skillet to form the shape of an Easter bunny. You can use a spoon to help shape the ears and round body.

  6. Cook the pancake until bubbles form on the surface and the edges begin to set, about 2-3 minutes.

  7. Carefully flip the pancake and cook for an additional 1-2 minutes on the other side, until golden brown and cooked through.

  8. Repeat with the remaining batter, greasing the skillet as needed.

  9. Once all the pancakes are cooked, arrange them on a plate to form your Easter bunny shapes.

  10. Serve the pancakes with whipped cream, fresh fruit, or maple syrup if desired. Enjoy your adorable and delicious Easter Bunny Matcha Pancakes!
